Dahi Bhindi
Ingredients:
- Coriander powder - 1/2 tsp
- Vegetable masala - 1 tsp
- Cumin powder - 1/2 tsp
- Chilli powder - 1/2 tsp
- Curry leaves - 1 tsp
- Bhindi - 150 grams
- Onion - 1 chopped
- Turmeric - 1/2 tsp
- Mustard - 1/2 tsp
- Salt - as per taste
- Curd - 1/2 cup
- Oil - 2 tsp
Method:
- Heat oil and fry the bhindi lightly in a pan.
- Now, add onion to the same pan and fry till golden brown.
- After some time, add all the other spices to the onion and cook it well.
- After the masala is cooked for about 5 minutes, add okra, curd and cook for some time.
- Next, add ghee, mustard seeds, curry leaves, and green chillies in a pan. After it gets hot, add the tempering to the dahi bhindi.
Dahi Kebab
Ingredients:
- Black pepper powder - 1/2 tsp
- Green chilli - 2 finely chopped
- Onion - 1 finely chopped
- Salt - according to taste
- Ginger paste - 1/2 tsp
- Bread powder-2 tsp
- Paneer - 100 g
- Curd - 1/2 cup
- Cheese-2 tsp
- Besan - 2 tsp
- Oil-3 tsp
Method:
- First, keep the curd tied in a cotton cloth to drain the water.
- Next, prepare the blend in a vessel by mixing paneer and other spices with gram flour.
- After this, grate the cheese in the gram flour mixture, add curd and mash it well.
- Next, make a kebab out of the mashed mixture and bind it by adding bread powder.
- Now, heat oil and deep fry the kebabs in a pan.
Dahi Parathas
Ingredients:
- Green chilli - 2 finely chopped
- Onion - 1 finely chopped
- Mint leaves - 1/2 tsp
- Turmeric - 1/2 tsp
- Salt - as per taste
- Ajwain - 1/2 tsp
- Curd - 1/2 cup
- Flour - 4 cups
- Ghee - 3 tsp
Method:
- First, add ajwain, green chilli, turmeric and salt to the flour and mix it well.
- After this, add curd, mint leaves, one spoon of ghee and mix it well.
- Add water as required, knead the dough and keep it aside for 10 minutes.
- Now, roll the dough into a paratha. Heat ghee and cook the paratha on both sides in a pan till golden brown.
- Dahi ka paratha is ready to serve with sabzi or chutney.
