Ingredients:

  • 500 gms Fresh or frozen strawberries
  • 50 gms lemons
  • 550 gms of sugar

Method:

  • Wash and remove the stems from fresh strawberries. If using frozen strawberries, thaw them before use.
  • Chop up the lemons into even chunks
  • Mix the lemons and strawberries together with half the sugar and stir together.
  • Add the strawberries and lemons to a large, sterilised jar.
  • Pour over the remaining sugar.
  • Let the jar sit in the fridge for at least a week.
  • The cheong can then be used as a base for summer cocktails or mocktails.
