Ripe jackfruit is an absolute favourite in the tropical regions of India. Its unique subtle sweet and fruity flavour makes it the cream of the crop amongst tropical fruits. Here’s one such recipe which can fit into your dining table any time of the day.
JACKFRUIT SEEDS STIR FRY
Preparation time- 10 minutes
Cooking time- 20 minutes
INGREDIENTS
For the mustard paste
- 2 tablespoons mustard seeds
- 1 tablespoon cumin seeds
- 3 green chillies
- 6 cloves of garlic
For the stir fry
- 1 cup jackfruit seeds, sun-dried for 2 days with the skin peeled-off
- 1 chopped onion
- 1 tsp panch phoran
- 1 ½ tablespoon mustard oil
- Salt (according to taste)
- 1 ½ tablespoon turmeric powder
- 1 ½ Kashmiri chilli powder
PROCESS
- Cut the dried and peeled jackfruit seeds into halves and boil them with turmeric powder and salt for 10 mins.
- Grind all the ingredients and make a smooth paste. Keep it aside.
- Heat mustard oil in a frypan, add panch phoran and onions. Saute till onions are golden brown.
- Add salt, turmeric powder, and Kashmiri chilli powder and combine well.
- Pour the mustard paste and mix well on medium heat. Add 100 ml water to cook it.
- Finally, add the jackfruit seeds and cook on medium heat for 5-10 minutes till it's scorched
This recipe can be eaten with rotis and is a perfect side dish for an Indian thali too. One can also prefer to eat them as a healthy snack option. Bon appetit!
