Tried Skyu? The Wholesome Traditional Ladakhi Winter Soup

Come winters and the we all crave for something warm and soothing and nothing best other than soup. Be a warm freshly done tomato soup or pumpkin soup or mix vegetable or even a spicy manchow soup, the comfort of a hot bowl is almost beyond words. 

But those living in absolute snow clad places, for them this warm bowl of comfort means a lot more. One such soup that has mostly been restricted to the dry and barren land of Ladakh is Skyu also spelled as skew- wholesome traditional soup which has wheat dough in the pasta shapes dunked in the broth and cooked in a soupy mixture of vegetables. This warm soupy delight is mostly served with Momos during the winters. But don’t confuse this soup with Thukpa, both are different. 

This staple soup of Ladakhi people is highly nutritious. The vegtables that goes into the making if this soup is mostly whatever one grows in their backyard. The soup mostly made of mutton or beef bones as the marrow is most hight in all nutritional value. Farm grown vegetables make the soup taste much better. Potato are must as the starch from potato gives that extra taste to the soup.

So, when the temperature dips to -20, this humble soup comes to your rescue. This easy soup that is perfect for those living in the borders of Siachen or extreme trekkers can be made up of veg and non-veg toppings.

Recipe

Ingredients 

    3 tomatoes

    2 onions (thinly sliced)

    250 gms peas

    4 onion shoots (sliced)

    3 Small potatoes (halved)

    1 inch  Ginger

    2 Green chillies

    1 teaspoon Red chilli powder

    1 ltr Water

    300 gms paneer or cow milk cottage cheese (cut into cubes)

    4 tablespoon Mustard oil

    Salt to taste

Method

For the soup 

    Heat mustard oil in a pot and once the oil is heated up well and is smoking then put in the ginger pieces and then the onions. Stir them till they turn brown

    Now add salt and whole green chillies, Keep it stirring for at least 10 minutes on medium to low heat.

    Add a teaspoon of red chilli powder and then the tomatoes. Cook the mixture for around 10 minutes 

    Now add the half cut, the onion shoots and the peas. Give them a good mix and then cover the utensil with a lid . Let the veggies cook for around 10 minutes over a low flame.

For the dough

    For the dough take the wheat flour and knead with lukewarm water. The dough must be hard not soft.

    Once the dough is ready then then roll it into long thin tubes.

    Then make small nugget from the dough and then flatten each nugget with thumb to make cup-shaped pieces.

Cooking the Skyu

    Add water to the soup mixture as per your desired consistency. Then let it cook for 10 -15 on low heat.

    After this mixture is cooked, add the rest of the veggies 

    Now add the skyu (dough nuggets) into the soup mixture and let it simmer for around 5 minutes.

    Finish it by topping some coriander.

    Serve piping hot in a bowl
