  • Heat ½ cup of oil in a large pan over low heat. Add the garlic cloves and cook with a wooden spoon, stirring frequently, for about 2 minutes, until it is sweet but not red.
  • Raise the heat to medium and add the tomatoes, basil sprigs, red pepper flakes and 1 ½ teaspoon kosher salt. Cook and stir for about 4 minutes or until some tomatoes start to sprout and release their juice.
  • Add some cherry tomatoes, but not all, then continue cooking, stirring occasionally, until a thick sauce is formed. It will take 10 to 12 minutes. Add sugar if the sauce is too sour and add more salt if necessary.
  • Peel the skin of cherry tomatoes and squeeze out the juice.
  • In the meantime, put the pasta in a large saucepan with salted boiling water and stir occasionally until cooked through.
  • Drain the pasta, add the sauce to the pan and cook for about 1 minute, stirring constantly, keeping the lid covered. Remove from heat and stir in grated parmesan.
  • Divide the pasta into the bowl; sprinkle with oil. Absorb with more parmesan and 1 cup of basil leaves.

Tip: To make this pasta recipe more interesting, you can mix cherry tomatoes with regular size tomatoes. Both can give an amazing taste to this dish.
