Savoury Mushroom And Thyme Oat Risotto Recipe

Ingredients:

1 cup steel-cut oats

2 cups sliced mushrooms (any variety)

1 small onion, finely chopped

2 cloves of garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

4 cups low-sodium vegetable broth

1/2 cup dry white wine (optional)

1/4 cup grated Parmesan cheese

2 tablespoons of olive oil

Salt and black pepper, to taste

Instructions:

In a medium saucepan, bring the vegetable broth to a gentle simmer. Keep it warm on low heat.

In a large skillet or wide pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook until translucent, about 3–4 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.

Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 5–6 minutes. Remove half of the cooked mushrooms from the skillet and set them aside for later use.

Add the steel-cut oats to the skillet and toast them for 2-3 minutes, stirring frequently, until they are lightly golden and fragrant.

If using wine, pour it into the skillet and cook until it's mostly absorbed by the oats.
