What is Za'atar?
It is a wonderful Middle Eastern herb native to Lebanon. This herb is dried and prepared with a mixture of spices like oregano, marjoram, thyme, sesame, sumac, salt and pepper. You can buy Za'atar spice in any grocery store.
Ingredients
8 chicken legs or thighs
4 tbsp olive oil
4 tbsp za'atar spice
½ tsp garlic powder
½ tsp ginger powder
¼ tsp salt and pepper
1 tbsp lemon juice
2 medium onions
1 garlic clove
Method
- Grease a baking dish with oil and arrange the chicken pieces.
- Combine za'atar spice, garlic and ginger powder, salt and pepper in a small bowl. Add a tablespoon of lemon juice. Add olive oil and mix well. Marinate the chicken on both sides with a brush. ( This marinated chicken can be stored in the refrigerator in a ziplock bag for up to 12 hours ).
- Preheat the oven to 400° Fahrenheit.
- Chop one onion and garlic clove and top it on the chicken in a baking dish.
- Bake for 40 to 45 minutes, until the chicken is golden and crumbly.
Note: Remove from heat and let the chicken rest for 5 minutes. The chicken is ready to serve when the internal temperature reaches 165 degrees Fahrenheit.
Sprinkle over some sumac in the chicken. Garnish with roasted dry fruits and fresh parsley.
How to store?
Storing cooked za'atar chicken is easy. You can put it in the refrigerator in a bowl and serve it for about 4 to 5 days. Heat in the microwave for about a minute.
