A lot of people are experimenting with rum cocktails now. Although quintessentially, mai tai is a century-old cocktail and not an Indian cocktail, we thought that masala and mai tai could gel together. We are not trying to 'Indianise' it. The truth is that masala is such an important component of Indian households, and so often stirred into beverages that we wanted to take that original idea of putting masala into sodas, iced teas and juices, and try it on cocktails. Although that may seem off-putting at first, the fact remains that chaat masala is a very delicious aromatic blend of mango powder, black salt, ginger, mint, coriander and so much more. It can add more elegance to the cocktail. Besides your mai tai won’t lose its simplicity. All in all, you only need a pinch because it has so many flavours going on.

The ingredients in a classic mai tai include rum, lime juice, almond syrup, orange curaçao and garnishes such as pineapple, cherries, blackberries and so on to lend a tropic vibe. Here, we also add chaat masala to the mix. We love the fact that creating new cocktails is so normal now. Fusion is really exciting when it comes to mixology, and we think you should join the club. We are so thrilled to share the recipe with you —
