The flavorful mushroom frittata is a low-carb and high-in protein recipe made with just a few simple steps. Frittata is similar to an omelette, but they are custard-filled with veggies, herbs, cheese, and meat. Frittatas are pre-cooked and then transferred to the oven on a pie tray or oven-friendly dish. An omelette filling is just sprinkled on the top of the egg; the frittata’s additions are mixed with the eggs and cream before cooking. Ingredients:

  • 2 tablespoon olive oil/butter 
  • 15-16 mushrooms (sliced) 
  • 7 large eggs (raw)
  • ¼ plain yoghurt or sour cream 
  • ¼ teaspoon salt 
  • ¼ black pepper
  • ¼ dried thyme 
  • ½ cup green onions (chopped) 
  • ½ cup grated parmesan cheese/mozzarella cheese (shredded)
  • Basil leaves (chopped)

Procedure:

  1. Preheat the oven. Now place a pie dish in the oven to heat up. 
  2. Heat the skillet on the stove, add 1 tablespoon of olive oil and the same proportion of butter. Let it heat up, then add mushrooms. Cook until it turns brown and tender. Evaporates all the liquid. About 10-12 minutes. And keep aside. 
  3. Beat eggs with plain yoghurt, salt, pepper, and thyme in a separate bowl. Whisk it and add green onions, cheese, and basil leaves. Mix with the help of the spatula. 
  4. Now remove the warm pie dish from the oven with oven mitts on, be careful in this step. 
  5. Apply melted butter/ olive oil on the base of the oven tray, transfer the mushrooms to the baking plate, pour beaten egg mixture on the top. 
  6. Bake the dish until the egg's edges turn golden brown in colour and puffy. And bake it for about 25-30 minutes. 
  7. After it’s done, insert the knife in the centre; if it comes out clean means your frittata is perfectly cooked. 
  8. Allow to cool down for 5-7 minutes, and then slice it in eight, six, or four triangle pieces and serve!
