Conceptualisation Of Romeo Lane
“As a gold-medalist engineer, I’ve always had a knack for innovation and creating something extraordinary. I wanted to offer more than what people were already experiencing in their cities—a place where they could enjoy everything under one roof, from lunch and brunch to coffee, sundowners, and crazy nightlife, complemented by exceptional culinary cuisine and crafted cocktails. That vision gave birth to Romeo Lane in 2019 with our flagship store in Delhi. The journey has been nothing short of beautiful. Starting from one outlet, we proudly have 16 outlets running across India today, and now, we’re expanding internationally with our first outlet in Dubai, UAE. It’s been an incredible ride filled with creativity, growth, and, most importantly, delivering unforgettable experiences to our patrons,” says Saurabh Luthra.
The head chef, Varun Mathur, adds, “Romeo Lane is more than just a restaurant—it’s an experience. “Each outlet is a blank canvas. When we start, we put in inputs that reflect the local culture while maintaining the essence of the Romeo Lane brand, making it both unique and consistent.” Chef Varun puts it out.
“Mohali has immense potential. The people here have a refined taste for European and Italian cuisines and truly appreciate a memorable dining and nightlife experience. Our Mohali outlet is unique—it gives off a cave-tavern vibe, complete with a patio where guests can sit under the sky and soak in the ambience.
Being a Punjabi myself, I know how much Punjabis love larger-than-life experiences, and I wanted to bring something extraordinary to my extended family here in Mohali. Romeo Lane Mohali embodies that—global cuisine, a high-energy vibe, and an unmatched ambience all under one roof,” Saurabh Luthra tells Team Slurrp.
Global Cuisine With A Punjabi Touch
In a conversation with Chef Varun Mathur, he says, “Cooking has always been a passion for me since childhood. Growing up, I would spend hours in the kitchen with my grandmother, experimenting with spices and flavours. This passion turned into a profession when I pursued hotel management. Over the years, I have worked in various kitchens, like the Trident Mumbai BKC, honing my craft and learning from seasoned chefs. I have also worked as a chef for Bollywood celebrities in Mumbai before returning to Delhi.
I have worked with Punjabi cooking techniques throughout my career. Using tandoor, in particular, is one of my favourites because it brings out such bold and smoky flavours. I’ve also explored slow cooking methods, like preparing curries over low heat for hours, which helps deepen the flavours. The use of traditional spices inspires me because of their versatility and depth.”
Saurabh Luthra proudly adds, “While Romeo Lane offers global cuisines and signature cocktails, we are always open to creating dishes and drinks that resonate with the local palate. For Mohali, we are exploring ways to incorporate flavours that reflect Punjabi vibrance—whether that’s in the form of unique cocktails inspired by regional ingredients or dishes that have a fusion twist to pay homage to the culinary legacy of Punjab.”
Must-Try Specialities
With an elaborate menu, be it the North Indian smoked appetisers, Asian bowls, or sophisticated cocktails, Chef Varun elaborated on the must-try specialities, “Being in Mohali, it’s essential to celebrate the local cuisine while blending it with our signature style. We have incorporated dishes like black garlic chicken, a contemporary twist to murgh malai tikka, and Saag burrata, our take on palak and sarson ka saag with paneer.”
“Each dish has been crafted with love and passion. One dish we all are very excited about is the pindi chana hummus with Poe. It is our take on Chole Bhature. Being a Delhi brand, we would not dare say that our version is better, but it’s definitely as flavourful. The dish is a dance of flavours on the plate as it has creamy and spicy hummus made with pindi chana and confit garlic, crispy okra and chutney, which adds to the texture and replaces the onion and chutney in the OG dish, spiced yoghurt, which cools the palate down and soft Poe bread which shared the fermented flavour and texture of Bhatura,” the Chef further recommends.
