Sai Thoom Juar Jo Dodo Recipe, Sindhi Special Flatbread!

It's the season for green garlic, often known as lilu lasan or hara lasun. This delicious ingredient is used to make many delectable cuisines and is called by many names in various regions of India. One of them is Sai Thoom (green garlic) Jo Dodo, a type of flatbread in Sindhi cuisine. Using green garlic and sorghum or Jowar flour, Juar Jo Dodo is a rustic bread cooked in the Sindhi tradition. It's a simple recipe to prepare; all you need to add is a pickle or curd to serve it for breakfast. While for lunch pair it with Sindhi Sai Bhaji and Tidali dal. The dough has a few herbs and such combinations create a filling flatbread. Jowar flour, which is an ancient grain is used to make a spring garlic dodo.  

In the absence of green garlic, dry garlic and coriander leaves can be ground together. Fresh green garlic, however, cannot be rivalled for its aroma. Sorghum has several health benefits and it is gluten-free. Thus, this Sindhi flatbread is an ideal choice for many people, including diabetics. 

Sai Thoom Juar Jo Dodo

Serves: 1

Ingredients

  • 1 cup jowar flour 
  • 2-4 green chillies 
  • A handful of fresh coriander leaves
  • 1 tbsp green garlic
  • 1 tbsp ghee
  • 2 tsp cooking oil
  • Water 1/2 cup
  • Salt to taste

In case one wants to increase the number of servings, add one big cup of flour for each flatbread.

Method

  • Wash, clean and chop the green garlic and coriander leaves
  • Pour the water into a vessel and bring it to a boil; turn off the flame and allow it to cool down a bit
  • Take a wide-mouth bowl and pour all the ingredients except oil and water
  • Add the warm water to the flour mix by stirring vigorously with a spoon to ensure there is no lump
  • Now knead it with your palm to make a soft dough, cover it with a thin cloth and let it rest for 15-20 minutes
  • Now divide the dough into two balls (depending on the size of flatbread you want)
  • Wet your palm lightly with water and pat the dough ball between your palms and keep patting until it becomes a roti size
  • If you aren't confident about patting the dough ball this way, you can use a roller pin
  • Heat a thick tawa and keep the flame medium, carefully place the roti on the tawa
  • Carefully pat the flatbread down to a thin roti
  • To ensure a properly cooked roti, drizzle oil over it and cook it on low heat. One side will take 2-3 minutes
  • Cook it thoroughly on the other side

Serve the dodo with pickle, raita, curd, sai bhajii or Sindhi spinach curry.
