Rice Congee: Try This ‘Soupy-Beverage’ From South India

Can soups be considered a beverage? We believe it’s all about semantics. One such drink/porridge has left us wondering about its category. Rice Congee is a type of thin watery delicacy which is made with rice. The word ‘congee’ derived from the Tamil word ‘kanji’. This beverage kind of dish is quite popular in southern parts of India and is mostly enjoyed during monsoon season for its rich nutrition profile.

Rice Congee can be consumed in two forms namely porridge and as a beverage. Rice congee is extremely simple to make and comes with a spicy punch. The ingredients involved in this dish are easily accessible as most of the elements are already present in every Indian kitchen. This concoction is prepared using rice along with bay leaves, black pepper, garlic and cumin. Rice Congee has an array of flavors that can not only satisfy your palate, but also keep your body nourished. Congee is not only popular in India but also in other parts of the world with a range of variations. One thing that's common among all versions of Congee is that they all are prepared with rice and disintegrated after prolonged cooking in water.

Ingredients:

  • ¼ cup rice, washed and drained
  • 5 cups of water
  • 1 tsp ghee
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 2 tsp black pepper
  • 1 garlic, muddled

Preparations:

1. In a pressure cooker, heat ghee over medium flame. Then add cumin seeds, bay leaf, black pepper and garlic.

2. When the seeds begin to crackle add rice and water. Stir it well and pressure cook for 5 whistles.

3. Don’t open the lid immediately, allow the steam to escape before opening it.

4. Stir the concoction nicely.
