Recipe For Koshari

Ingredients: 

1 cup of rice

1 cup of brown lentils

1 cup elbow macaroni

1 large onion, thinly sliced

3 cloves of garlic, minced

4 tablespoons of vegetable oil

2 tablespoons of tomato paste

400g crushed tomatoes

1 teaspoon ground cumin

1 teaspoon of ground coriander

½ teaspoons ground cinnamon

Salt and pepper to taste

Water for boiling

Optional toppings: crispy fried onions, chopped fresh parsley, and hot sauce

Instructions:

Rinse the rice, lentils, and macaroni separately under cold water.

In a medium-sized pot, bring water to a boil and cook the rice according to the package instructions until tender. Drain and set aside.

In a separate pot, add the lentils to boiling water and cook until they are tender but not mushy, usually about 15–20 minutes. Drain and set aside.

Cook the macaroni according to the package instructions until al dente. Drain and set aside.

In a large skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the sliced onions and cook until they turn golden brown and crispy. Remove half of the onions and set aside for garnishing.

In the same skillet, add the minced garlic and cook for a minute until fragrant.

Stir in the tomato paste and cook for another minute.

Add the crushed tomatoes, cumin, coriander, cinnamon, salt, and pepper to the skillet. Simmer the sauce for about 10 minutes, allowing the flavours to meld together.

In a separate small saucepan, heat the remaining 2 tablespoons of vegetable oil. Add the cooked lentils and stir them in the oil for a few minutes to infuse the flavours. Remove from heat.

To serve, start with a base layer of rice in a serving dish. Top it with a layer of lentils, followed by a layer of macaroni.

Pour the tomato sauce over the layers of rice, lentils, and macaroni.

Garnish the Koshari with the reserved crispy fried onions, chopped parsley, and hot sauce according to your preference.

Serve the Koshari hot and mix the layers together before enjoying this delightful Egyptian dish.
