  • 2 cups flattened rice flakes (poha)
  • 1 cup green peas
  • 1 medium-sized onion, finely chopped
  • 1-2 green chilies, finely chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • ½  teaspoon turmeric powder
  • ½  teaspoon red chilli powder (optional)
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Fresh coriander leaves, chopped, for garnish
  • Lemon wedges, for serving

Method:

  • Begin by rinsing the flattened rice flakes (poha) under running water for a few seconds. Drain and set aside.
  • Heat a tablespoon of oil in a large pan or kadai over medium heat. Add the mustard seeds and let them splutter. Then, add the cumin seeds and asafoetida (hing) and sauté for a few seconds until fragrant.
  • Add the finely chopped onions and green chilies to the pan. Sauté until the onions turn translucent and lightly golden.
  • Now, add the green peas and cook for a few minutes until they become tender. You can use fresh or frozen peas, depending on availability.
  • Sprinkle the turmeric powder, red chilli powder (if desired), and salt over the peas. Mix well to coat the peas evenly with the spices.
  • Reduce the heat to low and add the rinsed flattened rice flakes (poha) to the pan. Gently toss and mix everything together until the poha is well-coated with the spices and peas.
  • Cover the pan with a lid and let the mixture cook on low heat for 3-4 minutes. This allows the flavours to meld together while keeping the poha moist.
  • After a few minutes, remove the lid and give the Chura Matar a gentle stir. Taste and adjust the seasoning if needed.
