Ingredients of Sri Lankan Wattakka Curry
- Red pumpkin – 100 grams cut into small pieces
- Fenugreek seeds – 1 pinch
- Mustard seeds – 1 pinch
- Green chilli – ½ tsp finely chopped
- Curry leaves – 4-5 leaves
- Madras curry powder – ½ tsp
- Coconut milk – 100 ml
- Turmeric – 1 pinch
- Oil – one teaspoon
- Salt – as per taste
Recipe of Sri Lankan Vattaka Curry
- Heat 1 teaspoon oil, add mustard seeds, fenugreek seeds, curry leaves and green chillies in a pan.
- Now add chopped red pumpkin to it and cook it for a minute.
- Then add Madras curry powder and turmeric on top of it.
- Add coconut milk to this mixture and cook it on low flame for a while.
- Now cook it till it becomes soft. When you boil it, the curry will also become a little thick.
- This pumpkin roasted coconut curry will go with dosas and other Sri Lankan meal plans.
