Ingredients

For the taco batter:

  • 1 cup rava ( semolina )
  • ¾ cup yogurt
  • ¾ teaspoon salt
  • Chopped coriander leaves

For the filling:

  • 3 boiled potatoes ( medium-sized )
  • 2 tablespoon oil
  • ½ teaspoon mustard seed
  • ½ teaspoon salt
  • ½ cup spring onion
  • ½ cup cauliflower ( finely chopped )
  • ½ cup carrot ( finely chopped )
  • ¼ cup boiled peas
  • ½ teaspoon ginger ( grated )
  • ½ cup beans ( finely chopped )
  • ½ teaspoon garlic ( chopped )
  • ½ teaspoon garam masala
  • ¼ teaspoon mango powder
  • ½ teaspoon red chili powder
  • Tomato sauce and grated cheese for garnishing

Method

  • In a blender, put raw rava and blend to make powder.
  • In a mixing bowl, put the powdered rava, add salt, yogurt, coriander leaves and mix well. Now add water and make a medium-thick paste. Wait for 15-20 minutes for the batter to rest.
  • To prepare the filling, put the oil in a saucepan to heat up. Add the mustard seeds, grated ginger and garlic and sauté for a few seconds.
  • Add cauliflower, beans and carrots and saute for 2-3 minutes. Once the vegetables are lightly cooked and softened, add the spring onions.
  • Now, add spices (garam masala, sambhar masala, chili powder, mango powder, salt). Cook for one minute. Finally, add the boiled peas, and potatoes ( mash the potatoes before adding ) and mix well until all the spices are combined. The filling is ready.
  • After 15 minutes, uncover the rava batter. Add a few teaspoons of water to get a medium consistency paste.
  • Grease the hot pan with oil. Pour 2-3 tablespoons of rava paste in a circular motion and cook over low to medium heat. Flip the other side and cook for 2 minutes or until browned.
  • Take a rava taco, spread tomato sauce on one side or half of the taco. Put 2-3 tablespoons of the filling on top of the sauce. Put the grated cheese and cover the filling with the other half and press lightly.
  • Rava tacos are ready to serve.
