Rajasthani snacks are a potpourri of savours, from delicious Marwari food to regal and rich delicacies. We have handpicked three of our favourite Rajasthani snacks that you should never miss. Here’re the recipes:
Kalmi Vada
Ingredients:
- Green chilli - 2 finely chopped
- Salt - according to taste
- Turmeric powder - 1 tsp
- Cumin powder - 1/2 tsp
- Chilli powder - 1/2 tsp
- Asafoetida - 1/4 tsp
- Gram flour - 2 tsp
- Chana dal - 1 cup
- Oil - 2 cup
Method:
- Soak the gram dal in the water a day before.
- The next day, take out the gram dal from the water, put it in a mixer, grind it well, and take it out in a vessel.
- Add gram flour, salt, turmeric, etc., to the ground lentils, mix them well and keep it aside for 5-10 minutes.
- Now, heat oil in a pan.
- After 10 minutes, make vadas from the dal mixture.
- Now, fry the kalmi vada in oil.
Mirchi Vada
Ingredients:
- Red chilli powder - 1/2 teaspoon
- Amchur powder - 1/3 teaspoon
- Coriander leaves - 2 teaspoon
- Green chilli - 10-12 (large)
- Salt - according to taste
- Boiled potatoes - 2
- Fennel - 1 /2 tsp
- Besan - 2 cup
- Oil - 2 cup
Method:
- First, add salt, chilli powder, mango powder, asafoetida, fennel, red chilli powder, coriander leaves to the boiled potatoes and blend them well.
- After this, clean the green chillies, cut them in the middle and fill the potato mixture well.
- Take another vessel to prepare a thick batter by adding gram flour and light salt.
- Now, heat the oil. Dip the green chillies in the gram flour batter and fry them well when the oil becomes hot.
- Take it out and keep it in the kitchen tissue to remove the excess oil.
Sattu-Onion Pakoras
Ingredients:
- Coriander leaves - 2 teaspoon
- Chilli powder - 1/2 teaspoon
- Asafoetida - 1/4 teaspoon
- Salt - according to taste
- Turmeric - 1/2 teaspoon
- Ajwain - 1/3 teaspoon
- Sattu - 1 cup
- Oil - 2 cups
- Onion - 2
Method:
- First, clean the onion, chop it finely and keep it in a vessel.
- Take another vessel, put the ingredients like sattu, salt, asafoetida, turmeric powder, chilli powder etc., and mix it well.
- After this, put the sattu mixture in the onion pot; add little water and mix it.
- Now, keep the oil in a pan for heating. After the oil is heated, make pakoras from the mixture and fry them well.
