Kachre ki sabzi, an exceptional Rajasthani cuisine, is made with the freshest and most premium ingredients. Some might be wondering what kachra is? Kachra is a Rajasthani word for snap melons. This fruit is mainly grown and cultivated in Rajasthan itself and then transported all around the country. So get ready to learn to make this wholesome Rajasthani dish with us.
Ingredients-
- ½ kg kaacra
- 2-3 green chilli
- 10-12 garlic cloves
- Cumin seeds
- Cumin powder
- Salt
- Asafoetida
- 4 tablespoon Oil
- 1 tablespoon Red chilli powder
- ¼ teaspoon sugar
- 1 tablespoon Turmeric powder
- ½ tablespoon Coriander powder
Method-
- Heat oil and add cumin seeds, garlic cloves and green chilli in a pan.
- Meanwhile, add two tablespoons of water in a small bowl, a pinch of salt, turmeric, coriander powder, cumin and red chilli powder.
- Pour all ingredients into the heated pan from the bowl.
- Wash the kachra and peel them off. Cut them into small-medium sizes.
- Then in the same heated pan, add asafoetida and the chopped kachra and let it cook.
- Stir the sabzi for a while and keep it boiling, covered with a lid. When the kachra turns soft and the masalas have mixed well, add more water according to consistency.
- In the end, add sugar that helps bring out a wholesome flavour to the sabzi.
- Kachri ki sabzi is ready! Serve warm and decorate with coriander stalks.
