Quinoa Spinach Patties: A Snack Packed With Protein

Quinoa is a grain that contains all nine essential amino acids which makes it a complete protein. On the other hand, spinach is also a good source of plant-based protein and iron. These quinoa spinach patties contain 11 to 12 grams of protein. 

Here is how to make a healthy and tasty snack.

Ingredients 

  • 1 cup chopped spinach ( steamed )
  • 1 teaspoon olive oil
  • 2 cups water 
  • 1 cup uncooked quinoa 
  • ⅓ cup Parmesan cheese 
  • 3 cloves garlic ( minced )
  • ½ teaspoon kosher salt 
  • 1 cup breadcrumbs

Method 

  • Wash the quinoa well. Take a medium saucepan with 2 cups of water and add quinoa to it. Boil the water.
  • Cook until the quinoa softens and absorbs the liquid ( it will take about 20 minutes ). Let it cool down.
  • In a large bowl, whisk the eggs. 
  • Now, mix the cooked quinoa, Parmesan, minced garlic, kosher salt, steamed spinach and breadcrumbs. Let it rest for a few minutes to absorb the liquid. Make sure the mixture is not liquid but moist. 
  • Take a wide non-stick pan and heat the olive oil over medium heat. Take ⅓ cup of quinoa mixture for each patty. Fry the patties by covering them for 8 to 10 minutes per side until the colour turns golden brown.
  • You can serve these quinoa spinach patties with tomato ketchup or mustard sauce. 

If you don’t want to fry the patties, bake them in a preheated oven at 375 degrees F. It will take 10 minutes on each side to bake. For a healthier option, you can use the air frying method and cook the patties at 400 degrees, lightly sprayed with oil for five minutes on each side.
