An all-time favourite, kheer or rice pudding has been passed on for generations as the most popular dessert option for every occasion in India. Whether it is a birthday, a wedding or a puja, kheer is considered an auspicious dish that is prepared at every home. But how about bringing some variety in the traditional kheer recipe? While you can prepare different varieties of kheer, here are some ways to jazz up your regular kheer and try some new ones:
Dry Fruits Kheer: A bowl of kheer is loaded with the goodness of milk and rice, but how about adding some more nutrients to it? All you need to do is crush some cashews and almonds and sprinkle them on top. You can also soak some raisins for a few minutes and add them to your pudding.
Mango Kheer Delight: Summer is all about mangoes - be it in the form of shakes, juices, lassi or ice cream. This summer, give mango kheer a try. Garnish your bowl of pudding with chopped mangoes. For better taste, refrigerate the mangoes before adding them to your kheer. As an alternative, you can also add some mango syrup for a more luscious flavour.
Kheer With Hot Jalebis: Refrigerate kheer and top it off with hot jalebis. Break the jalebis into pieces and sprinkle them on top. Your cool kheer with hot jalebis will be the perfect dessert for those warm days.
Kheer With Nolen Gur: Without nolen gur, winter days are complete in Bengali homes. While there can be a variety of desserts based on nolen gur - for instance, gurer sandesh, gur rasogolla and gur doi - it can also go well with kheer. You can, of course, use gur instead of sugar while making kheer, but topping it off with some liquid nolen gur will sweep you off your feet. The fusion of liquid gur poured on kheer is ambrosial.
Rice pudding spruced up with sprinklers, chocolate chips and syrups of different kinds are slowly gaining popularity among dessert lovers. The idea behind innovations in kheer is to combine another sweetening agent for better taste. However, one rule to keep in mind is that you need to do everything in moderation for the right taste,
Finally, if you are bored with rice pudding, get your hands on some semolina kheer or even sooji ka kheer that can be prepared with thickened milk, better still with condensed milk.
