Quick Recipe: Here’s How To Make The Tangy Sun-Dried Tomato Pasta

Sun-dried tomatoes have a tantalizing flavour to it which balances the flavour as well as the texture of the whole dish. In this recipe the pasta is cooked in thick creamy paste so that the whole dish absorbs the intense flavours nicely. Ingredients:

  • ½ cup pasta of choice
  • 1 cup sun-dried tomatoes, roughly chopped
  • 5-6 cloves garlic, finely chopped
  • 1 medium size onion, finely chopped
  • ¼ cup basil leaves, finely chopped
  • ½ cup parmesan cheese or as required, grated
  • 2/4 cup cream
  • 1 ¼ cup full cream milk
  • Salt to taste
  • Pepper to taste
  • Water as required
  • Oil as required

Preparations:

1. In a large saucepan add pasta, water and a pinch of salt with a drizzle of oil. Let it boil until it is soft in texture. Then strain the excess water and keep it aside.

2. In a blender add the sun-dried tomatoes, cream, milk, pepper and salt. Blend it until the paste is smooth.

3. Take a skillet and heat 2 tbsp of oil over medium heat. Add garlic and onion. Sauté them until onions are translucent.

4. In the same pan add the blended paste and stir it for a couple of minutes. Lower the flame and add the boiled pasta.

5. Give a good stir while adding cheese into it. Coat the pasta well.

6. Turn off the flame. Close the lid and let it sit for 1-2 mins.

7. Lastly, garnish it with basil leaves.
