INGREDIENTS
- 2 cup poha
- 1 tbsp peanuts
- 2 cups boiled mix sprouts
- 1 tsp mustard seeds
- 1 tbsp chana dal
- 3-4 curry leaves
- 2 onions, finely chopped
- 2 green chilies, finely chopped
- 2 tbsp chopped coriander leaves
- 1 tsp turmeric powder
- 1 tbsp lemon juice
- 1 tbsp oil
- 1 tbsp sugar
- Salt, according to taste
METHOD
- Rinse the raw poha twice and place it on a sieve to drain. Leave aside for 10 minutes.
- Heat a pan and add oil to it. Add mustard seeds and let them splutter.
- Add the curry leaves, chana dal, chillies, and peanuts and sauté them till the peanuts are slightly golden brown.
- Next, add the onions and cook till they are translucent.
- In the same pan, add the mixed sprouts with half a cup of water and cook them for 3-4 minutes.
- Add turmeric, salt, and sugar and mix well to combine.
- Finally, add the poha and mix well to combine without mashing it.
- Finish by garnishing coriander leaves and lemon juice.
You can have this poha for breakfast and evening snacks with green tea or black coffee as well. If you want, you can also add soaked soybeans to add more protein to it. This poha recipe is a perfectly balanced breakfast with minimal calories and about 6.5 grams of protein.
