As we all know Shrikhand is a special dessert of Maharashtra and Since Shrikhand is the main ingredient of Piyush, you can call it a Maharashtrian Drink. You can also use flavoured Shrikhand, like some people prefer mango Shrikhand.
This nectar drink is also consumed by Gujaratis in summer. So, we clear your doubt, Piyush is both Maharashtrian and Gujarati drink. To make two servings to this drink, follow the below mentioned recipe.
Ingredients
2 cups shrikhand
2 cups plain buttermilk
2 cups whole ( full-fat ) milk
1 teaspoon crushed cardamom
½ teaspoon ground nutmeg
Icing sugar as per your taste
10-15 strands of saffron
Chopped almond and pistachio for garnishing
Recipe
In a blender, add 2 cups of Shrikhand, 2 cups of plain buttermilk and 2 cups of whole milk. Add icing sugar (to taste), 1 teaspoon crushed cardamom, ½ teaspoon ground nutmeg, 10-15 saffron strands (soaked in 2 tablespoon milk) and stir until combined. Pour Piyush into medium serving cups. Garnish your drink with chopped almonds and pistachios. Keep it in the refrigerator for 15 minutes and serve it chilled.
