Pina Colada: A Puerto Rican Summer Delight

Piña colada, invented in the mid 20th century, is Puerto Rico’s national drink. You can find many versions of this drink, but this one is everyone’s favourite. 

Here’s how you can make a glass of pina colada in a few simple steps. 

Ingredients

  • 2 cups freshly diced pineapple
  • ⅓ cup of coconut milk
  • 50 ml cream of coconut ( unsweetened )
  • 120 ml white rum
  • 100 g caster sugar
  • 2 tablespoon lime juice
  • A handful of ice cubes
  • Cherry for garnishing

Method

Heat ½ cup water in a pan. Pour sugar and keep stirring until it completely dissolves. Keep the sugar syrup aside. 

In a mixing bowl, combine pineapple, coconut milk, coconut cream, white rum, lime juice, sugar syrup, and ice cubes.

Blend on high power until it has a smooth drink-like consistency.

Pour into glasses and garnish with cherries, pineapple, and lime slices.

Tip: You can avoid making sugar syrup if you want. 

Alternate ingredients: 

Vodka 

If you want to substitute rum, vodka is a great option. It is odorless and tasteless, neutralising the sweetness. 

Greek yogurt 

If you cannot find coconut cream, use greek yogurt in place of it.  

Pineapple juice

Fresh pineapple juice would be amazing, but in case you don’t have it at home, use packaged pineapple juice. 

Dark rum

You can replace white rum with dark rum in your piña colada recipe. It will deepen the taste, giving you a less sweeter version of a classic cocktail.
