Ingredients:
For the truffle filling:
1 cup of khoya
1/2 cup powdered sugar
1/2 teaspoon cardamom powder
2 tablespoons chopped mixed nuts (pistachios, almonds, and cashews)
1 tablespoon rose water or kewra water
A pinch of saffron strands (soaked in warm milk)
Ghee (clarified butter) for greasing
about 227 grams dark or semi-sweet chocolate, chopped
Chopped nuts, edible silver or gold leaf, or colored chocolate (for decoration)
Method:
In a pan, crumble the khoya and cook it over low heat until it becomes soft and starts to leave the sides of the pan.
Add the powdered sugar, cardamom powder, chopped nuts, rose water, and saffron milk. Mix well until the mixture comes together and thickens.
Let the mixture cool down to room temperature.
Grease your hands with a little ghee to prevent sticking. Take small portions
of the cooled khoya mixture and roll them into smooth balls. Place them on a parchment-lined tray.
Melt the dark or semi-sweet chocolate in a microwave or in a double boiler until smooth and glossy.
Using a fork or toothpick, dip each khoya ball into the melted chocolate, making sure its fully coated.
Allow the excess chocolate to drip off, then place the coated truffles back on the parchment-lined tray.
While the chocolate coating is still wet, sprinkle chopped nuts, edible silver or gold leaf, or colored chocolate over the truffles for decoration.
Chill and set the truffles. Place the tray of coated truffles in the refrigerator to allow the chocolate to set completely. This usually takes about 1 to 2 hours.
