There is something about simple, exquisite desserts like mousse, custards and puddings that can win us over in a jiffy. You do not need an army of ingredients to put them together and guess what neither do the big five-star properties. We learned it when celebrity Chef Manish Mehrotra gave us his Badaam Mousse and Almond biscuit recipe, and since then, we have become a little extra obsessed with almonds in general. Besides adding crunch and richness to a dessert, they can well be the hero ingredient of the dessert too. Here’s proof.
Badam Milk Mousse And Almond Biscuit (Serves 7-8)
For Badam Milk Mousse:
Ingredients:
Almond Flakes (45 Gms)
Almond Milk (150 Ml )
White Chocolate (425 Gm)
Bakery Cream (400 Ml )
Egg Yolk (5)
Fine Sugar (50 Gm )
Saffron (½ Gm)
Green Cardamom Powder (½ Tsp)
For Biscotti:
Ingredients
Unsalted Butter (75 Gms)
Castor Sugar (100 Gms)
Egg (1)
Refined Flour (150 Gm)
Baking Soda (1 Gm)
Baking Powder (3 Gm)
Almond With Skin (50 Gm)
Almond Powder (25 Gm)
Zest Of Lemon
Method:
For badam milk mousse
- Nicely roast the almonds flakes in a preheated oven at 180 degree celsius for 4 minutes until it obtains a beautiful golden colour
- Next, heat almond milk, throw in the white chocolate in the same pot and make a smooth ganache. Then add saffron threads and green cardamom powder, mix it thoroughly.
- In another bowl, whisk yolks and sugar till it reaches a creamy consistency.
- Next, beat bakery cream to ribbon consistency.
- Now, carefully fold the ganache in beaten yolk and afterwards fold the beaten cream into it.
- Pour this mousse in a cup and let it chill till it sets.
- Take slivers of almonds and garnish the mousse, serve with almond biscotti.
For biscotti
- Take almonds with skin, chop them roughly.
- By whisking lightly, cream butter and sugar in a mixing bowl. Then add egg to bowl and mix again.
- Take refined flour, baking powder, baking soda, lemon zest and almond powder, add to the mixture and mix it thoroughly
- Throw in the roughly chopped almonds. Mix well. Do not overmix.
- Now carefully shape the mixture that it appears like french loaf . Bake it at 180 celsius for 20 minutes.
- Let it cool, cut thin slices and bake it at 150 celsius for 8 to 10 minutes or till crisp.
