South Indian cuisine forms a huge component of Indian cuisine which is popular all across the world. Dosas, for instance are loved equally in many other Asian countries and even in the United States. During my visit to the New York City, I was surprised by the popularity of India’s Saravana Bhavan there, which attracted many dosa lovers. And while we absolutely love gorging on paper thin dosas or the one stuffed with spicy aloo filling, did you know dosa varieties go beyond the usual?
Keema Dosa, Egg Dosa, Chicken Dosa, Paneer Dosa...when it comes to dosa, the list is close to being endless. And a true dosa fan might’ve tried most of these. But did you know about Neer Dosa? A breakfast specialty from Mangalore in the state of Karnataka, 'Neer Dosa' literally means water (neer) dosa due to its batter which is of watery consistency. While there is one Neer Dosa in Tamill Nadu as well the batter preparation for it is different from the Mangalore one.
The Neer Dosa from Mangalore needs just three ingredients - rice flour, coconut and a little bit of salt. It makes for a thin, lacy and beautiful crepe that is vegan and gluten-free. The sheer light and comforting texture of this dosa makes it a staple in Mangalorean households, one can eat it at any time of the day. Since these are not loaded with stuffing, one can pair it with any gravy of choice.
The recipe is as simple as the dish itself, what one needs to keep in mind is just to get the right consistency of batter right. If the batter is too thin or too thick, the dosa can have cracks. The preparation of these dosa begins with rice that is soaked for anywhere between 4-8 hours, which is then grounded with salt, coconut and water.
