Navratri 2023 is round the corner! According to the Hindu calendar, this nine-day festival is yearly observed in the spring and autumn seasons. This religious celebration, Navaratri, honours Goddess Durga. People worship Goddess Durga's nine incarnations each day. Even the food we eat is a cause for celebration. For nine days, some people follow a vegetarian diet, while others fast. This fast is a little different from the ordinary fast, only particular things are not to be consumed. Those who are observing this fast should keep easy, fuss-free recipes in their back pocket. Since it's crucial to consume nutrient-dense foods throughout the vrat, we've provided the recipe for kaddu ki sabji (pumpkin vegetable). Pumpkin is a food that is very healthy and particularly high in vitamin A. Our eyes are shielded from night blindness and age-related vision loss by vitamin A. This vitamin benefits bone health as well. Simple seasoning is used in this dish to bring out the natural sweetness of pumpkin and create a flavorful, spicy dish. The nicest part is how quick and simple this dish is.
- 250 grams of diced, peeled pumpkin
- 1/2 cup grated jaggery
- 3 teaspoon chilli powder
- 1 teaspoon coriander leaves
- 3 teaspoons dry mango powder
- salt as required
- For Tempering
- 1 1/2 cup refined oil
- 1/2 teaspoon black mustard seeds
- 1/2 teaspoon fenugreek seeds
- 1/2 teaspoon cumin seeds
- 2 pieces dry red chili
Method
- To make this delicious delicacy, Black mustard seeds, fenugreek seeds, cumin seeds, and whole red chilies are added to hot oil in a pan.
- Then, stir in diced, peeled pumpkin and cook for a while.
- When the pumpkin is mushy, cover the pan and continue cooking with the red chilli powder, salt, and mango powder.
- Serve with chopped coriander as a garnish.
