Mutton Bhuna Masala: This Simple Dish Screams Indulgence

The mutton curry that we have brought to you today tastes as delicious as it looks. Being a comparatively dry curry than typical Indian curries, this Bhuna Masala is a celebration of delectable flavours. INGREDIENTS

  • 500 grams mutton
  • ¼ cup mustard oil
  • 4-5 cloves
  • 7-8 black peppercorns
  • 2 green cardamom pods
  • 2 black cardamom pods
  • 1 tsp mace powder
  • 1 bay leaf
  • 1-inch cinnamon stick 
  • 2 cups onions, thinly sliced
  • 1-inch ginger pounded 
  • 10-12 garlic, crushed 
  • 4 green chillies, slit
  • ½ cup fried onion
  • 1 cup curd 
  • 2 tsp red chilli powder 
  • 1 tsp turmeric powder
  • 1 tsp cumin powder 
  • 1 tsp coriander powder 
  • 1 tsp garam masala 
  • 2 tbsp coriander leaves 
  • 1 tsp sugar
  • Salt, according to taste 

METHOD

  1. Heat some mustard oil in a pressure cooker. 
  2. Add the sugar and wait till it is brown. 
  3. Next, add the dry masalas (cloves, cardamom pods, peppercorns, bay leaf, cinnamon) to the pressure cooker and fry for 10 seconds. 
  4. Add the onions and green chillies and saute till the onions are golden brown. 
  5. Now, add the ginger and garlic along with the spice powders and fry till the raw smell disappears. 
  6. Keep the flame on high and add the mutton pieces and saute to combine it with the masala. 
  7. Add half a cup of water and salt and cook the mutton with the lid on till it's almost cooked. 
  8. Remove the lid of the pressure cooker, add the whisked curd and fried onions and cook till it's almost dry and the masala is reddish-brown. 
  9. Remove it from heat and garnish it with coriander leaves and garam masala powder.
