Fans of Schitt’s Creek, raise your hands! The Canadian sitcom that wrapped up last year, went on to bag many coveted honours including its big win at the 72nd Primetime Emmy’s, where the show became the first ever comedy or drama series to take home the trophies for four acting categories. The coming-of-age drama tracing a journey of an affluent family who had to reside in a motel of an unheard-of town and start afresh struck a chord with millions. In one of the episodes when they realise that they’d have to learn to cook to avoid further debts, what ensues is a hilarious bonding episode between a mother and a son trying their best in the kitchen. Mother being the iconic Moira Rose (Catherine O' Hara), a former TV Soap Opera actor, giving her company in the kitchen is her flustered, fashion enthusiast son David Rose (Dan Levy).
We all remember this scene from season 2, episode 2 of Schitt's Creek on Netflix. Moira reads out her mother’s enchiladas recipe, which she’s “passing on to” David. David is “ladling and stirring at the same time”, trying hard to keep up with his mother’s instructions who may have missed out on few steps or is repeating a few, who knows, she is Moira Rose, she is the most confident person in every room. Everything is going well, until it is time to “fold in the cheese”, “What does that mean, what does ‘fold in the cheese’ mean”, David asks. “You fold it in”, she says. David, still equally clueless, goes again, “How do you fold it, do you fold it in half, like a piece of paper, and drop it in the pot or what do you do”. “Here’s what you do, you just...fold it in” says Moira. By this time, you are basically on the floor laughing at their hilarious exchange. Both of them have no idea how to proceed with their Enchiladas, because none of them know how to ‘fold the cheese’.

What Does Folding In The Cheese Mean?
You’d be surprised to know that folding in the cheese is the easiest bit about making Enchiladas. It is basically just stirring in the liquid gently, from bottom to upwards, almost like ‘folding’ it up over the cheese, so that the sauce does not break and become clumpy. One of the best ways to do so is using a rubber spatula, make sure your vessel is also non-stick.
Enchiladas are essentially stuffed tortillas, rolled around and served doused in a savoury sauce. It is a Mexican dish, that serves as a comfort food for many across the United States too. Made with various ingredients such as meat, cheese, potatoes, beans, vegetables, Enchiladas are incredibly filling and healthy too depending upon the sauce you choose. Most of you may have seen two kinds on Enchiladas, one appears to be reddish in colour and one white. And if you have ever wondered which among these is the fake Enchilada and which is the real one. Then must we tell you both of them are a hundred precent real. The red sauce is a chilli-based sauce like Salsa Roja, where tomatoes and chili-based salsa is the core component. Now coming to the cheese-based sauces, which we are guessing is what David was struggling with. The cheese-based sauces such and chile con queso, requires sedulous stirring and ‘folding in’ so that you do not end up with a lumpy muddle. However, too much stirring can also turn against you. So it is imp to have balance. This cheese sauce is much milder and creamier, undercutting the hotness of the stuffing of Enchiladas. In traditional recipes, heaps and heaps of cheese is used to make this sauce, giving it a very luscious, thick texture, which is then poured over the tortillas.
