Mira Kapoor, the social media influencer and now founder of a beauty brand – Akind, is also a self-acclaimed foodie. Whether she travels with Shahid Kapoor and her kids or experiments in the kitchen, she makes it a point to share snippets of her foodie adventures on her Instagram handle.

Being a vegetarian, Mira Kapoor is always on the lookout for good eateries in India and across borders to get a plant-based diet. After recently enjoying a vegan Japanese meal in New York, the influencer has now posted lip-smacking pictures of the food she whipped up for herself and her husband, Shahid Kapoor.

With a quirky caption, “Just wanna say I cooked a mean mix sabzi whilst in America because you know I can't do without my aloo and yellow dal the moment we cross Indian airspace,” she uploaded a picture of her aloo sabzi, dal, and tofu bhurji as her Instagram stories.

The first picture on Mira Kapoor’s Instagram story is a sauteed sabzi made with chopped potatoes, beans, and carrots. With a perfect blend of tadka, which seems to be made with a little oil, jeera, haldi, salt, and red chilli powder, her aloo ki sabzi looks utterly pleasing.

The next picture features a tofu bhurji captioned as, “And a tofu bhurji for the Mr.” The scrambled tofu, the dairy-free and protein-rich version of paneer, is too a go-to option for vegetarians. It can be quickly whipped up by sauteeing some chopped onions with spices like jeera, haldi, salt, red chilli powder, garam masala, etc. Once aromatic, you can stir in chopped tomatoes and coriander leaves. After the tomatoes are tender, you can add scrambled tofu and give it a stir to make the protein-rich sabzi.

Since Mira Kapoor can’t live without her aloo sabzi and yellow dal, the next dish she cooked in the US had to be dal. Captioned as, “Soul food is yellow dal,” Mira Kapoor’s cooked lentil must have made everyone reminded of home. You can even spot the tadka made with jeera and bay leaves in the dal, which must have made Mira Kapoor’s stay in the US truly home-like.
