Here’s how to make matcha tea muffins
Ingredients:
- 2 ½ cup of milk ( soy or almond milk, whichever you prefer)
- 2 tablespoons of lemon juice
- 1 teaspoon of vanilla extract
- 1 tablespoon of ground flaxseed
- ¼ cup of coconut oil
- ½ cup of maple syrup
- 1 ¾ cup of wholemeal flour
- 2 teaspoons of baking powder
- ½ teaspoon of salt
- 1 ½ teaspoon of matcha green tea powder
- Chocolate chips
Recipe:
- Preheat the oven at 370 degrees F
- In a bowl, put milk, ground flax seeds, lemon juice, and vanilla extract. Whisk properly and leave. Let the batter get thick for 5 to 10 minutes.
- In a separate bowl, make a dry mixture by putting flour, baking powder and salt. Then add the matcha powder. Make sure there are no lumps while stirring and mixing.
- In a large bowl, melt the coconut oil and maple syrup. Then add the batter and stir. Gradually add the dry mixture and stir, but not too much.
- Add chocolate chips to the mixture.
- Pour the mixture into a muffin tin and bake for about 20 minutes, until the batter comes out clean, but before the edges turn brown.
- Let it cool and serve.
