1 3/4 cups (210g) powdered sugar

3 tablespoons (25g) unsweetened cocoa powder

3 large egg whites, at room temperature

1/4 cup (50g) granulated sugar

Pinch of salt

1/4 teaspoon cream of tartar

For the Chocolate Ganache Filling:

4 oz. (120g) semi-sweet or bittersweet chocolate, finely chopped

1/2 cup (120ml) heavy cream

2 tablespoons (30g) unsalted butter, softened

1 teaspoon of vanilla extract

Instructions:

Macaron Shells:

Line two baking sheets with parchment paper or silicone baking mats. Prepare a piping bag with a round tip.

In a food processor, combine almond flour, powdered sugar, and cocoa powder. Process until finely combined. Sift the mixture into a large bowl.
