MasterChef Pankaj Shares A Versatile Potato Dough Recipe

Dough Recipe 

Ingredients: 

1 kg potatoes 

1 cup cornflour 

Salt to taste 

1 tsp pepper powder 

1 tsp mint powder 

1 tsp peri peri powder 

2 tbsp chopped carrots 

2 tbsp chopped beans 

2 tbsp chopped garlic 

2 tbsp sweet corn 

2 tbsp chopped coriander 

1 tsp chili flakes 

2 tbsp oil 

Oil to fry 

Method: Peel and dice the potatoes. Boil the potatoes till soft. Drain the potatoes and mash well. Add the corn flour, salt to taste, pepper powder, 2 tbsp oil and knead well to make a smooth dough. Now divide this dough into 5 equal parts to make 5 different snacks from each portion.  

To 1st part add the peri peri powder, 2nd part, add the mint powder, to the 3rd part add the chopped carrots, beans, processed cheese to the 4th part add the garlic, coriander and chili flakes and to the 5th part add sweetcorn. Mix the mentioned ingredient to all the parts respectively and give it a good mix and knead to a smooth texture. In all the portions you can add salt as per your taste.  

Snack 1: Peri Peri Potato Twisters 

You can put the dough in a pipping bag and use scissors to make a hole big enough for the dough to come out. Make three long lines on a piece of plastic paper. Strand them together like braids to make the shape of twisties. Keep going until the dough is finished. Heat oil in a kadai until it's medium hot. Then turn down the heat and carefully drop the twisties into the oil to fry them. Once golden brown transfer them to a plate. Serve hot with your favourite chutney or ketchup.    

Snack 2: Potato Veggie Triangles 

To roll out the dough, use the same plastic sheet as a base. Use a round cutter to make circles. In order to create the shape of a crescent moon, cut additional circles from the centre of the first circle. From the rest of the portion, make more crescent moons. After they're done, fry them in the same pan. Serve hot, with ketchup or chutney on the side. 

Snack 3: Potato Veggie Triangles 

Press the dough into a long log. Then, gently shape the sides together to make a triangle that looks like a pyramid. Now, use a sharp knife to cut the dough into small, equal pieces. You can reshape each triangle once, and then coat them in crumbs once more before putting them in hot oil to fry. When they're done, put them on a plate.  Enjoy hot.  

Snack 4: Potato Jalebi 

Fill the dough in a piping bag and make a hole for the dough to squeeze out smoothly. To make swirls out of the dough, press the pipe into hot oil. Let them fry till golden. Remove them on a plate and enjoy the savoury hot potato jalebis at home.  

Snack 5: Sweetcorn Potato Bites 

Gather the dough, split it into equal parts, and roll each piece between your palms to make a small ball. Use all the dough to make balls, then fry them in hot oil. Serve hot with your favourite dip when it's done.
