Pasta is the real definition of comfort food. Whether it is made in pesto sauce, primavera sauce, red tomato sauce or white sauce, we just love them all! You know you cannot go wrong if you order a bowl of hot pasta overflowing with a generous amount of cheese at a café. All pasta sauces taste equally heavenly but there is something about well-cooked white pasta that can make you forget all your day's woes.
It is indeed true that cheese and cream can spruce up any dish. White sauce which is also known as Béchamel is one of the mother sauces of Italian cuisine, which is made using all-purpose flour, milk and butter. This sauce gives the creamy texture to the pasta which just makes it ever-so-scrumptious. To make this delicacy more flavorful we bring you this fusion-style pasta which will make you fall in love with pasta even more. In this recipe, different vegetables are sautéed with Indian herbs and spices which makes it the scummiest dish, that is suitable for every taste-palate.
So, here’s the recipe of white sauce pasta with a hint of desi flavours
Ingredients:
• 1 cup of boiled pasta
• 1 ½ cup of whole milk (room temperature preferred)
• 1 ½ tbsp all-purpose-flour
• 2 tbsp of butter
• ¼ chopped carrots
• ½ cup boiled corn kernels
• 1/8 cup of green peas
• ¼ cup of capsicum
• ¼ cup of bell peppers
• ½ tbsp refined oil (less scented oil)
• 2 garlic cloves, finely chopped
• ½ tbsp oregano
• 1 tbsp chili flakes
• Cheese
• Salt to taste
• Black pepper to taste

1. Take a non-stick pan and heat oil over a medium flame heat. When the oil is hot enough add the veggies- carrot, bell pepper, capsicum, peas, corn kernels. Sauté the vegetables for 5-6 minutes.
2. When the vegetables are crispy, take them from the pan and keep it aside.
3. In the same pan add butter and as soon as the garlic melts, add garlic. Sauté it for 20-30 secs.
4. After this add all-purpose-flour slowly and try to mix it with the garlic-butter mixture. Sauté the mixture until the flour loses the raw smell. Make sure that the mixture doesn’t change its color to brown or more yellowish in color.
5. Turn down the flame to low heat and start pouring milk in batches so that there aren’t any lumps in the mixture. Do it with the help of a whisk for better results.
6. When the mixture is smooth add cheese to the sauce. Let it cook for another couple of minutes.
7. Then add salt, black pepper, chili flakes and oregano. Mix it well.
8. Turn off the heat. Then add the boiled pasta and veggies into the white sauce. Mix everything together and close the lid for 3-4 minutes.
That’s it your lip-smacking pasta is ready to eat. Enjoy it while it's hot and creamy.
