We all become slow and lazy during the winter, whether you blame it on the dip in temperature or the mountain of warm and cosy blankets on our beds. Even while we enjoy the longer nights, we find ourselves looking for reasons to stay in bed even during the day. Some of us could find this to be the ideal scenario, but not all of us do; many of us must be awake and at work, just like in any other season. Even while the winter months tend to make us sluggish, they also offer us a variety of foods that will give us just the boost we need. Til (sesame) is one of the most useful ingredients among the many winter-specific ones that reappear at the end of the year. It is claimed to increase your vitality and help you warm up. Additionally, it's simple to gorge on this healthy seed thanks to the assortment of toasty, savoury, and sweet winter recipes that include til. A traditional Indian dish known as til chikki is prepared for the Makar Sankranti celebration (kite flying festival).

Sesame seeds and sugar are combined to create a crispy snack that can fulfil your mid-meal desires. This delectable winter treat is prepared especially for holidays like Lohri and Makar Sankranti. Due to its long shelf life, this crispy crumbly til chikki can be kept and savoured for months.

This til chikki is a healthy treat for future mothers since the winning combination of sesame seeds and jaggery provides a good boost of iron, which is necessary to maintain healthy haemoglobin levels. The baby will receive the right amount of oxygen and nutrients if there is a sufficient amount of iron in the mother's body. When you're feeling queasy, just pop a Til Chikki into your mouth, and you'll quickly feel better. During the Sankrant festival, it is customary to prepare this til gur ki chikki.

Ingredients:

3/4 cup sesame seeds

1/2 cup chopped jaggery

1 ½ tsp ghee

Method:

Sesame seeds should be dry roasted for 5 to 6 minutes on a medium flame in a deep non-stick pan before being added to til chikki. Take out and set aside.

Add the jaggery to the ghee that has been heated in the deep nonstick pan. As you continuously stir, cook the mixture for 2 to 3 minutes over a medium temperature. Turn off the heat, then stir in the roasted sesame seeds well.

When the mixture is prepared, spread it evenly over the back of a greased thali or a flat piece of stone. Using a greased rolling pin, roll it out thinly into a 200 mm. (8") diameter circle.

Use a sharp knife to cut them into 38 mm (1. 5"1. 5") square pieces. Make sure the til chikki has finished cooling. The til chikki should be kept in an airtight container after cooling.
