The best part about the summer season has to be mangoes. Ranging from the sweetest ‘Alphonso’ to the fibrous ‘Dasheri’, with their natural sweetness and nutritional benefits, mangoes have all the right reasons to be the favourite fruit of most people. If you love mangoes, apart from binging on the chopped fruit, you can add the fruit to your desserts and make them even more delicious.

MangoMisu
Ingredients:
- 6 pcs lady finger biscuits/ vanilla cake slices
- 100g milk for soaking
- 35g aamras/ mango pulp for soaking
- 100g Mascarpone cheese
- 100g whipped cream
- 50g icing sugar
- 25g aamras for the cream mixture
- 1 mango cut
Instructions:
- Prepare the soaking mixture by combining milk & aamras. Set aside.
- In a bowl, mix together mascarpone cheese, whipped cream, icing sugar & aamras. Whisk well.
- Now start the layering by placing a few Ladyfinger biscuits on a plate.
- Then, pipe the mango cream mixture and top it up with cut mango pieces.
- Repeat the same process for the next layer.
- Garnish with cut mangoes and mint leaves.
- Refrigerate for 1 hour and serve chilled.
2 Mins Mango Cake
Ingredients:
- 40g all-purpose flour
- 35g sugar
- 20g salted butter
- 4 tbsp milk
- 1/4 tsp baking powder
- 15-20g mango purée or aamras
- Cut mangoes for garnish
Instructions:
- Mix all the ingredients in one bowl and make a smooth batter.
- Transfer to a microwave-safe mug.
- Microwave it for 2 to 3 minutes on medium to high heat.
- Your cake is ready to be served.
- Garnish with chopped mangoes, whipped cream or any topping of your choice.
