To start the day off well, a healthy breakfast is always necessary. When you eat well in the morning, you feel energised and proper nutrition helps the day start on the same note. A fantastic and healthful alternative to rice is millets. Millets come in a variety of varieties, including barnyard millet, foxtail millet, finger millet, pearl millet, and others. I utilise practically all of them. Their tastes are also somewhat similar to one another and they all have a pretty similar appearance. You can cook the same recipe using any variety of millet, however I've used little millet (saamai).

Ingredients:
- 1/2 cup- little millet
- 1/2 cup- yogurt (curds)
- 1 tbsp- ghee
- 1/2 tsp- cumin seeds
- 2 tbsp- curry leaves chopped
- 2 tsp- green chillies chopped
- 1 cup- water
- 1/2 tsp- salt
- 1/4 cup- coriander leaves chopped
- 2 tbsp- Roasted peanuts peeled
- Ghee - enough to roast
Makes 6 pieces
Method:
- Take ½ cup of millet or sama rice into a bowl, put water as needed and rinse two times properly.
- Discard the water and soak for two hours with adding fresh water as needed.
- After two hours you can see the rice has been turned very soft.
- Now discard all water and transfer that to the mixer and add ½ cup curd to it and grind finely.
- After getting a fine batter from it, add the rest curd and mix altogether finely.
- Add one table spoon of ghee to a pan and after getting the ghee heated for few seconds, add one table spoon of cumin seeds to it.
- Now add one tablespoon of chopped curry leaves and 2 tablespoon of finely chopped green chillies. Saute well for few seconds.
- Add one cup of water and bring it to a boil.
- Now add ½ tablespoon of salt, keep the gas on low flame and add the millet batter to the water and keep stirring.
- The batter begins to thicken, now you need to stir for five more minutes.
- Add ¼ cup of chopped coriander leaves and half cup of peanuts to the batter and mix well.
- Now you can see the batter turning into dough slowly. Switch off the flame.
- Add ½ table spoon of ghee to a bowl where the dough can be moulded easily.
- Apply ghee all over the bowl and transfer the dough into that. Let it sit for 15 minutes at minimum.
- After 15 minutes, when the dough has been set properly, transfer over a flat surface.
- Cut the dough into pieces. The millet cake is ready.
- Take ½ tablespoon of ghee to a pan, let the cake roast for few minutes. Flip the cake and cook from other sides as well.
- Little Millet Cakes are ready to serve with chutney.
