Kulcha Pate
INGREDIENTS QUANTITY
- Matra Patte
- Boiled white mattar 500 gm
- Yellow chilli 15 gm
- Black chaat 15 gm
- Tamarind paste 10 gm
- Black pepper powder 10 gm
- Black salt 5 gm
- Lime juice 30 ml
- Salt 5 gm
- Roasted jeera powder 5 gm
COOKING METHOD
- Boil Matara, and mix all the remaining ingredients. Please give it a rest
- Make a smooth patte. Blend in a blender by adding olive oil while blending.
- Adjust the seasoning, if needed.
Onion Tomato Salsa
- Chop onion 100 gm
- Chop tomato without skin 100 Gm
- Mint leaves chop 10 gm
- Green coriander leaves chopped 20 gm
- Green chilli 15 gm
- Cumin roasted powder 10 gm
- Black salt 2 gm
- Lime juice 15 ml
Make a fine salsa using these ingredients and keep it aside.
Kulcha
- Mini Kulcha 6 pcs
- Butter 20 ml
Melt butter and sear the kulchas over a hot plate.
Assembly
- Place warm buttered kulcha over the plate
- Top with onion tomato salsa
- Pipe the smooth matra patte over the salsa.
Toppings
- Parsley 5 gm
- Micro Greens 5 gm
- Edible Flowers 2 gms
Garnish with chopped dried parsley, edible flowers and microgreens.
