Chinese food has invaded the Indian food scene like nothing else. And one of the most beloved delicacies is definitely the Hakka noodles. A bowl of noodles is the epitome of comfort food for many of us, that is why it has become a part of India's gastronomic landscape now. While it is a simple dish to look at, vegetable or meat and noodles tossed together - it is when you make it do you realise it is not a simple as it seems. A lot of times while cooking Hakka noodles, I personally end up with either soggy noodles, half-cooked or too mushy vegetables etc. However, there are some foolproof tips and tricks that can really help make your noodles exactly as you want them to be.  

Making Hakka noodles at home is one of the best ways to make sure there are no added preservatives and the cooking technique is healthier. You can play around with sauces, veggies and other ingredients as much as you want. Here are a few tips that can help you make the perfect hakka noodles at home:

1. The vegetables

Make sure to cook the vegetables in a certain order. If you put hard vegetables later, you will end up with the remaining uncooked when the rest of the dish is ready. For instance, put in carrots first so they are cooked by the time the dish is ready, and perhaps spring onions later since they take less time to cook. This way the soft veggies don’t get mushy and hard veggies are cooked perfectly.  

2. Seasoning

A lot of us often season everything together at the end. But that can result in the uneven distribution of seasoning besides it turning out completely undercooked. Since the recipe is a high-flame one, it is crucial that the seasoning is added evenly from time to time so it doesn’t get charred,  

3. Meat

When cooking the noodles with meat, it is advised that you cook the vegetables and meat separately, and add the meat near the very end of the cooking to avoid overcooking or under-cooking. Also, ensure that the pieces are of around the same size as the vegetables as they look nice and even when the whole dish comes out.
