Ingredients:
- 1 packet frozen spinach
- 1 packet cream cheese (softened)
- ½ cup artichoke hearts (drained and chopped)
- ¼ cup shredded parmesan Cheese
- ¼ cup mayonnaise
- ½ tsp garlic powder
- ½ tsp salt
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tsp olive oil
- ½ cup shredded mozzarella cheese
Method:
- In the first step, microwave spinach in a large bowl for approximately 2-3 minutes until it gets warm.
- Now, let it cool for a bit and then squeeze to remove the excess moisture.
- Transfer spinach to the bowl after squeezing it.
- Add cream cheese, artichoke hearts, parmesan cheese, mayonnaise, garlic powder, and salt as per your taste.
- Mix all the ingredients properly and leave them aside for a while.
- Next, pound chicken breasts to achieve an even thickness. It should not be thicker than 1-inch.
- Once done, add salt and pepper on both sides.
- After this, preheat the oven to 190°C.
- Take a pan and heat olive oil in it over a medium-high flame.
- Include chicken breasts in the pan and cook them from both sides until it turns brown.
- It will take approximately 2-3 minutes and work in batches to cook the chicken breasts properly.
- Next, place these chicken breasts in a baking dish.
- Spread spinach-artichoke mixture on top of each breast before putting it in the oven.
- Bake the chicken breasts in the preheated oven until the chicken is no longer pink and the juices run clear. It will take approximately 20 to 22 minutes.
- Keep a close eye while it is getting baked. Add an instant-read thermometer into the centre and it should read at least 74°C to ensure the chicken is baked.
- Once done, take out the dish and top the breasts with the mozzarella cheese and again bake it until the cheese has melted. It will take only 1 to 2 more minutes.
- Finally, a delicious and aromatic dish is ready to be served along with fried potatoes or veggies.
