People fasting on Karwa Chauth eat in the morning before sunrise and after the moonrise. If you are thinking of serving a delicious spread or enjoying community cooking with friends and relatives, aloo is the easiest vegetable to work with and requires minimal effort. You can boil them in bulk and they appeal to everyone’s palate. Here are some recipes to consider.

Jeera Aloo

The classic jeera aloo with dal, rice, and puri is perfect for Karwa Chauth or any other festive spread. It is among a few recipes that need minimal effort during preparation. You need to dice potatoes and add them to the kadhai with ghee, cumin seeds, salt to taste, and turmeric. To enhance the taste of the recipe, you can cook them with slit green chillies, red chilli powder, coriander powder, and garam masala.

Potato Patties

Potato patties are considered unhealthy because of the amount of oil they are cooked in. However, you can make them healthy by adding spinach to the mixture or preparing a lip-smacking mix of spinach leaves and sweet potato. Add peas, garam masala, turmeric powder, coriander powder, and red chilli powder to the blend, shape it into small patties, and air-fry them. Serve it with chutney of your choice.

Aloo Kebab

Just like patties, you can also make hara bhara kebabs with aloo. Add pureed spinach and mashed peas to boiled and grated potatoes. Add cornflour starch, breadcrumbs, and a few spices to this blend and top it with fresh coriander leaves, grated ginger, and roasted cumin powder. Shallow-fry kebabs or cook them in a tandoor for a charred texture.

Aloo Chaat

When you are fasting throughout the day, you want to eat something tasty and lightweight. Aloo chaat is the easiest recipe you can try. One way to make aloo chaat is to shallow-fry large potato chunks until their crust is crispy and the insides are done. Garnish them with green chutney and ginger slices. You can prepare a spicy potato mix, and deep-fry aloo balls and toss them in the mixture of chopped onions, tomatoes, coriander leaves, and lemon juice.

Aloo Tikki

Don’t forget that aloo tikki is loved by everyone. Crispy tikkis topped with curd, tamarind chutney, and green chutney will leave you satisfied after fasting throughout the day. You can top the tikki with chopped tomatoes, boiled matar or chhole, chopped green chillies, chaat masala, and sev before digging in. An unusual combination to try is pairing tikki with a plain or masala paratha.

Dum Aloo

When speaking about festive recipes, you cannot miss mentioning dum aloo. While cooking bharwan aloo is tricky, you can make a different variant with baby potatoes. While you prepare the gravy with cashew paste, tomato puree, and spices, deep-fry peeled potatoes. As the gravy starts releasing oil, add fried potatoes and water. Bring the mixture to a boil, sprinkle kasuri methi, garam masala, and coriander leaves. Keep the lid on and open it right before serving.
