Kadhi Chawal is an Indian veg comfort food, comprising a thick and soothing curry made of yoghurt and gram flour. It is tangy, it is soothing and all things irresistible. It may or may not feature pakoras - the Indian fritters made with gram flour, onion, and chillies. Kadhi can be paired with roti and naan too, but it goes best with a plate of steaming hot, white rice. Together the combination spells magic that millions of Indians swear by.

- Mix yoghurt, gram flour, turmeric powder, salt, and water until it is smooth and lump free. It is advisable to add water gradually.
- Bring the mixture to a boil.
- Heat oil in a pan, add the masalas, the red chillies, coriander seeds, fenugreek seeds, ginger, and fry for about 1 to 2 minutes.
- Finally, add chilli powder, curry leaves and stir.
- This tempering needs to be added to the kadhi.
- Once added, lower the flame and simmer for 10 to 12 minutes.
- Boil the kadhi again, lower the flame and cook for a few minutes.
- Drop the pakoras and serve hot.
