In many parts of Indian cooking, the locals have followed zero-waste food practices creatively and in the best possible ways. Kachariyu from Gujarat is another testimony to it. Oil seeds such as sesame and groundnut are harvested throughout the winter. To prepare Kachariyu, the oil removal residue is combined with jaggery. This dish's name comes from kacharvu, which means crushed in Gujarati. It is also known as Til Sani. It follows a simple recipe, and the delicacy can be put together quickly. It has evolved into a typical Gujarati winter treat made with sesame seeds, jaggery, dates, almonds, and ginger powder.
The combination of ingredients makes it a fantastic and healthful treat for the winter. Til kachariyu is a traditional Gujarati Kathiyawadi winter treat. This sweet has no added sweetness from processed sugar and thus is beneficial to improving adults' skin, hair, hormonal balance, and even kids. They are also a good source of fibre, calcium, iron, zinc, and other nutrients.

Ingredients
- 1 cup black sesame seeds
- 1 cup grated jaggery
- 1 cup chopped dates
- 5 almonds
- 1 tablespoon dry ginger powder
- 1 teaspoon ganthoda powder
- 1 tbsp muskmelon seeds
- 3 tbsp desiccated coconut 3 tbsp
- 1 tbsp poppy seeds
- 1.5 tbsp ghee
- Almond slices for garnishing

Method
- Clean the sesame seeds to ensure there are no dirt or impurities. If needed, wash it and spread it on a big plate, and let it dry on its own
- Heat a wok. Pour the black sesame seeds and, keeping the flame low, keep roasting them.
- Continue roasting by stirring and cook for 2-3 minutes, till the seeds leave the raw aroma.
- Take off from the flame and set it aside. Allow it to cool down naturally
- Take a mixer jar and pour all the ingredients, including the sesame seeds, and grind to a powder
- Now take a big bowl, transfer the freshly pounded mixture, pour the ghee and start kneading it till it leaves oil
- Keep pressing the seeds and dates mix to the bottom of the bowl with pressure
- Upside down it on a plate and garnish it with poppy seeds, cashew nuts and almond slices. Let all the ingredients get set.

Traditional Kachariyu devoids any dry fruits. So, one can add or skip them. One can make laddoos or fudge from this mix.
