Ingredients:
- 250g Ivy gourd
- 1/4 Cup grated Coconut
- 1/2 Cup Onion chopped
- 4 Green Chilli cut lengthwise
- 1/4 tsp Turmeric powder
- 1/2 tsp Mustard seeds
- 1/2 tbsp Coconut oil
- Salt according to your prefered taste
- Curry leaves
Method:
- First of all, you will have to wash the ivy gourd and chop it into small pieces
- Now mix together grated coconut, chilli and turmeric powder in a bowl or container and keep aside
- The next thing you have to do is heat the oil in a pan and pop the mustard seeds in it
- Now saute the onion until it turns golden brown, add curry leaves and saute for a few seconds
- Now add the coconut mix and chopped ivy gourd kept in the bowl into the pan
- Add salt according to your prefered taste, mix it well and cook with a lid on a low flame while stirring occasionally
- After 15 minutes, the vegetable will be cooked and becomes a bit crunchy
- Now remove the lid and stir-fry for another 1 minute on medium to high flame
