It’s A Cakewalk For Aussies: Try These Lamington Recipes For Your Sweet Cravings

If you haven’t tried the lamington yet, you ought to try one. Lamingtons are basically sponge cakes or butter cakes that have been dipped in a generous amount of chocolate and topped with a shredded coconut icing. If you ever tell an Aussie that you’re craving some cake, be ready to be served with these tiny and moist square cuts in a few minutes. 

Legend has it that the Australian governor, Lord Lamington had some unexpected guests over and the chef had to cook something for them. So he came up with these little bundles of sugar. Another tale tells us that it was named after Lord Lamington because he wore a homburg hat that resembled a cake. If you research a little more, there’s another story that props up saying that it was invented the Lord’s cook in order to make use of burnt sponge cake. 

One way or the other, what we are grateful for is this heavenly cake that was born in Queensland. Enough about the cake, it’s time to bake some lamingtons with a twist. 

If you combine the genius of French patisserie with an Australian discovery, you’ll get the ultimate dessert experience. With coconut jam and chocolate sauce, this soufflé is a marvel.
