This dish is often consumed in winter as Khichdi keeps our body warm and energised in cold weather. The main ingredients Garhwalis use in this khichdi is black sesame seeds or kaala til. Garhwali Khichdi can be served with cottage cheese, cucumber, papad or ghee.

Ingredients ( serving 4 )
2 tablespoons ghee
1 cup rice
1/2 cup black urad dal
4 tablespoons black sesame seeds ( til )
1/2 teaspoon turmeric powder
1 ½ teaspoon cumin seeds
1 tablespoon ginger
1 tablespoon garlic
2 chopped green chillies
1 teaspoon coriander seeds
8-10 black peppercorns
4 cloves
Pinch of Asafoetida
Salt to Taste
Method
- Wash and soak the rice and urad dal in water for two hours. Keep it aside.
- Take a non-stick pan, roast cumin seeds, coriander seeds, black peppercorns and cloves. Keep it aside.
- In the same pan, roast the black sesame seeds until they make cracking noise.
- In a blender, mix roasted spice and sesame seeds. Also, add chopped green chilli, ginger and garlic. Grind to a smooth batter or ground masala.
- Heat the ghee in a pressure cooker.
- Add ½ teaspoon cumin seeds with a pinch of asafoetida.
- Add the soaked rice and urad dal and stir well. Cook for a few seconds.
- Add salt, turmeric and blended paste to 3 cups of water.
- Cover and cook until 3-4 whistles.
- Transfer the khichdi to a plate and serve hot with papad, chutney and curd.
