What is shrikhand? It is a delectable and healthy Indian dessert made from constrained curd. Shrikhand is rich, creamy, low fat flavoured with dried fruits (diced), saffron and cardamom. Here are some simple and basic shrikhand recipes that would be of great use for your friends, family and special guests.
Cardamom Shrikhand
Shrikhand is a delicious dessert made with yoghurt flavoured with cardamom, saffron and sugar.
Ingredients:
- 3 cups of hung curd
- 1/3 cup of powdered sugar
- 1/2 tsp of cardamom powder
- Roughly chopped 12-13 cashew nuts and almonds
Method:
- Use either curd bought from the store or homemade curd. But must assure that it is not sour.
- Filter the yoghurt through a cheesecloth or muslin cloth.
- Put curd in the fridge until almost all the water is removed or for 6-7 hours.
- Put an empty container under the curd box to get the drained fluid from the curd.
- Must ensure that curd is thick after 6-7 hours. Now shift the dense curd to a container.
- Either dump the liquid or use it in cooking chapati.
- Add cardamom and sugar to the curd. Now stir the entire mix well.
- Following, add the cashew nuts and almond to the dish and stir them properly. Serve it chilled. But before doing so, freeze the shrikhand for an hour.
Mango Flavoured Shrikhand
A traditional Gujarati recipe, prepared from hung curd and mango pulp. It is popularly served as a dessert with poori and chapatis.
Ingredients:
- A pinch of green cardamom powder
- 2 to 3 tablespoons of chopped nuts
- ½ cup of sifted powdered sugar
- 1 cup of ripe mango pulp
- 3 cups of hung yoghurt
Method:
- Put some yoghurt in a container.
- Add green cardamom powder, powdered sugar mango pulp and half of the nuts. Now whisk well till it is well blended.
- Refrigerate for at least 30 to 45 minutes and shift into earthenware dishes
- Garnish with leftover nuts and serve chilled.
