Black jaggery or palm jaggery, also known as karupatti or panai vellam in some regions of South India, is a traditional sweetener derived from the sap of various species of palm trees. The sap is collected by making a small cut on the flower bud of the palm tree that allows the sap to flow out from the trunk, which is then collected in containers. The collected sap is then transferred to a large vessel and heated. As it heats up, the moisture content of the sap begins to evaporate, leaving behind a concentrated syrup.

Once the sap is condensed to the desired consistency, it is allowed to cool and solidify, resulting in black jaggery, which is dark brown and has a distinct deep caramel flavour. Often used as a sweetener in various cuisines, particularly in South Asia and Southeast Asia, black jaggery has a unique flavour profile that is different from regular sugar, with hints of caramel and a rich, earthy taste.
