Its indistinguishable green colour comes from the plethora of green veggies that go into it.
Made with spinach, potatoes, and green peas, this is a divine snack for vegetarians, and can also be served as part of a meal. These fresh greens combined with exotic spices create an amazingly irresistible dish that is delicious, aromatic and mouth-watering, and also healthy. They are crispy from the outside yet tender from the inside.
You’ll Need
1 tsp olive oil
1/4 cup french beans
1/4 cup green peas
1/4 of a green bell pepper
1/4 cup spinach puree
1 boiled potato
1/2 tsp chopped ginger
1/2 tsp chopped green chilli
1-2 tbsp cornflour
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp red chilli powder
1/2 tsp garam masala
Salt to taste

Instructions
- To a pan, add the olive oil and heat.
- Add to it, peas, green bell pepper, green beans and sauce for a minute.
- Pour in 1/2 cup of water and allow to cook with the lid on.
- Bring them off the heat when cooked and let cool down.
- Add the veggies to a blender, grind till smooth consistency is achieved.
- In another bowl, add this veggie paste, spinach puree, potato, ginger, green chili, cumin powder, coriander powder, red chili powder, garam masala, salt, and cornflour, and mix well.
- Let the mixture sit at room temperature and rest.
- Make Tikkis as per the desired size.
- Meanwhile, heat oil in a pan if you wish to shallow fry. For a deep fry, heat oil in Kadhai.
- Drop into the oil, cook both sides and serve hot alongside green mint chutney.
Pro Tip- If you don’t wish to fry your kabab, then bake in an oven pre-heated at 180 degrees Celsius for 20-30 minutes or until golden brown on both sides. Don’t forget to flip the kabab halfway. Baking will give the Tikki, a crunchier texture.
